Ingredients
For the Choux Pastry (Pâte à Choux):
-
1 cup water
-
1/2 cup (1 stick) unsalted butter, cut into pieces
-
1 tablespoon granulated sugar
-
1/2 teaspoon salt
-
1 cup all-purpose flour
-
4 large eggs, at room temperature
For the Mango-Mascarpone Cream:
-
1 cup (8 oz) mascarpone cheese, well chilled
-
1/2 cup heavy whipping cream, well chilled
-
1/2 cup ripe mango puree (from about 1 large mango, blended smooth)
-
1/3 cup powdered sugar
-
1 teaspoon vanilla extract
For the Passionfruit Glaze and Garnish:
-
1/2 cup fresh passionfruit pulp and seeds (from about 4-6 passionfruits)
-
1 cup powdered sugar
-
1-2 teaspoons water, as needed
-
1 cup fresh ripe mango, finely diced
-
1/2 cup toasted sweetened coconut flakes
-
Powdered sugar, for dusting
Instructions
Step 1: Make the Choux Pastry
-
Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
-
In a medium saucepan, combine the water, butter, sugar, and salt. Bring the mixture to a rapid boil over medium-high heat.
-
Once boiling, immediately remove the pan from the heat. Add the all-purpose flour all at once. Stir vigorously with a wooden spoon or spatula until the mixture pulls away from the sides of the pan and forms a cohesive, smooth ball. This usually takes about 1 minute.
-
Return the saucepan to medium-low heat and cook for an additional 1-2 minutes, stirring constantly, to dry out the dough slightly. A thin film should form on the bottom of the pan.
-
Transfer the dough to the bowl of a stand mixer fitted with a paddle attachment (or use a hand mixer). Let the dough cool for 3-5 minutes, until it’s warm to the touch but not hot (so it doesn’t cook the eggs).
-
With the mixer on low speed, add the eggs one at a time, fully incorporating each egg before adding the next. The dough may look slippery at first, but it will come together. After all the eggs are added, the dough should be smooth, thick, and glossy, holding a “V” shape when the beater is lifted.
Step 2: Pipe and Bake the Puffs
-
Transfer the choux dough to a large piping bag fitted with a large plain or star tip (e.g., Wilton 1A or 2D).
-
Pipe rounds of dough about 1.5 to 2 inches in diameter onto the prepared baking sheets, spacing them at least 2 inches apart. For larger puffs like the one in the photo, pipe larger rounds, about 3 inches in diameter. Use a wet finger to gently press down any tips of dough.
-
Bake at 425°F (220°C) for 15 minutes. Do not open the oven door!
-
Reduce the oven temperature to 350°F (175°C) and continue baking for another 20-25 minutes, until the puffs are golden brown, firm, and feel light for their size.
-
Turn off the oven, crack the door open slightly, and let the puffs cool inside for 10 minutes. This helps them dry out and prevents collapsing.
-
Transfer the baked puffs to a wire rack to cool completely.
Step 3: Prepare the Mango-Mascarpone Cream
-
In a large, chilled bowl, use a hand mixer or a stand mixer fitted with a whisk attachment to beat the cold heavy cream until soft peaks form. Set aside.
-
In a separate medium bowl, beat the chilled mascarpone cheese with the powdered sugar and vanilla extract until smooth and creamy.
-
Gently fold the mango puree into the mascarpone mixture until fully combined.
-
In two batches, gently fold the whipped cream into the mango-mascarpone mixture using a spatula. Be careful not to deflate the cream. The mixture should be light and airy but stable.
-
Transfer the cream to a piping bag fitted with a small star tip (e.g., Wilton 1M or 4B).
Step 4: Fill and Glaze the Puffs
-
Once the puffs are completely cool, you can either slice them in half horizontally or poke a small hole in the bottom of each puff using a paring knife or a skewer.
-
If slicing: Pipe a generous swirl of the mango cream into the bottom half of the puff. Top with a few fresh mango cubes and a spoonful of passionfruit seeds. Place the top half on gently.
-
If filling from the bottom: Insert the piping tip into the hole and squeeze the mango cream until the puff feels full and heavy.
-
For the glaze: In a small bowl, whisk together the fresh passionfruit pulp and the powdered sugar until smooth. If the glaze is too thick, add water, 1 teaspoon at a time, until it reaches a drizzling consistency.
-
Drizzle or spoon the passionfruit glaze over the top of each filled cream puff, letting it drip down the sides.
-
Immediately garnish each glazed puff with a few diced mango cubes and a sprinkle of toasted coconut flakes.
-
For the final touch, lightly dust the puffs with powdered sugar.
Tips for Success
-
Don’t Rush the Choux: Take your time drying out the dough after adding the flour. This ensures the puffs have structure and can puff up correctly.
-
Use Room Temperature Eggs: Cold eggs won’t incorporate as well into the warm dough, affecting the rise.
