Ingredients
For the Coconut-Graham Crust:
-
1 ½ cups (150g) graham cracker crumbs
-
½ cup (45g) sweetened, shredded coconut
-
¼ cup (50g) granulated sugar
-
½ cup (113g) unsalted butter, melted
For the Cream Layer:
-
16 oz (450g) cream cheese, softened to room temperature
-
½ cup (100g) granulated sugar
-
1 teaspoon pure vanilla extract
-
1 cup (240ml) heavy whipping cream, cold
For the Mango Swirl & Topping:
-
1 ½ cups (225g) fresh mango cubes (plus extra for topping)
-
2 tablespoons granulated sugar
-
1 tablespoon fresh lime juice
-
½ cup (45g) sweetened, shredded coconut, lightly toasted (for garnish)
Instructions
Prepare the Crust:
-
Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
-
In a medium bowl, combine the graham cracker crumbs, ½ cup shredded coconut, and ¼ cup sugar. Pour in the melted butter and mix until all the crumbs are evenly moistened and resemble wet sand.
-
Firmly press the crumb mixture into the bottom of the prepared baking pan in an even layer. Chill the crust in the freezer for 15 minutes while you prepare the cream layer.
Make the Cream Layer:
-
In a large bowl, using a hand mixer or stand mixer fitted with the paddle attachment, beat the softened cream cheese until smooth and creamy, about 2 minutes. Add the ½ cup sugar and vanilla extract, and beat until well combined and fluffy, scraping down the sides of the bowl as needed.
-
In a separate chilled bowl, use the whisk attachment to whip the cold heavy cream until stiff peaks form.
-
Gently fold the whipped cream into the cream cheese mixture in two separate additions until no streaks remain. Be careful not to deflate the cream. Spread the cream layer evenly over the chilled crust.
Prepare the Mango Purée & Assemble:
-
Place 1 ½ cups of fresh mango cubes, 2 tablespoons of sugar, and fresh lime juice in a blender or food processor. Blend until completely smooth.
-
Dollop the mango purée over the cream layer. Use a butter knife or skewer to gently swirl the purée into the cream layer, creating a marbled effect.
Chill and Serve:
-
Cover the pan with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the bars are fully set.
-
Once set, use the parchment paper overhang to lift the entire block of bars out of the pan. Place it on a cutting board and use a sharp knife to cut into 16 squares.
-
Before serving, top each bar with a generous spoonful of fresh mango cubes and a sprinkle of the toasted coconut flakes.
Tips for Success
-
Room Temperature Cream Cheese: Ensure your cream cheese is truly at room temperature before mixing to avoid lumps in your cream layer.
-
Cold Heavy Cream: For the fluffiest result, keep your heavy cream and mixing bowl cold before whipping.
-
Toasting Coconut: Keep a close eye on the coconut when toasting; it can burn quickly. Toast it in a dry skillet over medium heat, stirring frequently, until golden brown.
-
Clean Cuts: For clean edges, wipe your knife with a damp cloth between each cut.
Storage and Freezing
-
Storage: Store the assembled bars in an airtight container in the refrigerator for up to 4 days.
-
Freezing: The bars can be frozen before the final topping is added. Wrap the uncut or cut bars (without fresh mango/toasted coconut) tightly in plastic wrap and foil and freeze for up to 1 month. Thaw overnight in the refrigerator before adding fresh toppings and serving.
Serving Suggestions
These bars are perfect on their own, but you can elevate the experience by serving them alongside a scoop of vanilla ice cream or a drizzle of warm raspberry sauce. They are an ideal sweet note to end a summer barbecue or a light dinner.
