Instructions
Prepare the Financier Layers:
-
Preheat and Prep: Preheat your oven to 375°F (190°C). Grease three 6-inch round cake pans generously with butter and line the bottoms with parchment paper.
-
Brown the Butter: In a small saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter foams, turns a deep golden brown, and develops a nutty aroma. Immediately remove from heat and let it cool slightly (about 10-15 minutes) but do not let it solidify.
-
Mix Dry Ingredients: In a large mixing bowl, whisk together the almond flour, powdered sugar, all-purpose flour, and salt until well combined.
-
Combine Wet Ingredients: In a separate medium bowl, whisk the egg whites, almond extract, and vanilla extract until just frothy.
-
Make the Batter: Pour the egg white mixture into the dry ingredients and whisk gently until just combined and no large lumps remain. Do not overmix. Fold in the slightly cooled brown butter in two additions until fully incorporated and the batter is smooth.
-
Bake: Divide the batter evenly among the three prepared cake pans. Bake for 18-22 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
Prepare the Raspberry Frosting:
-
Cream the Base: In a large bowl (or the bowl of a stand mixer fitted with the paddle attachment), beat the softened cream cheese and softened butter together on medium-high speed until creamy and smooth, about 2 minutes.
-
Add Sugar and Flavor: Add the sifted powdered sugar, vanilla extract, and raspberry powder. Beat on low speed until incorporated, then increase to medium-high and beat for another 2-3 minutes until fluffy. Scrape down the sides of the bowl.
-
Whip the Cream: In a separate chilled bowl, whip the cold heavy cream with a hand mixer (or a whisk) until stiff peaks form.
-
Fold: Gently fold the whipped cream into the raspberry cream cheese mixture in two or three additions using a spatula, until fully combined and uniform in color. Be careful not to deflate the whipped cream.
Assemble the Stack:
-
Level and Base: If the financier layers have domed significantly, use a serrated knife to level the tops. Place one financier layer on a serving plate or cake board.
-
First Layer: Spread a generous layer (about ¾ cup) of the raspberry frosting over the top of the first financier. Press a ring of fresh raspberries into the frosting around the perimeter, and sprinkle more raspberries over the center.
-
Second Layer: Place the second financier layer on top, pressing gently to adhere. Repeat the frosting and raspberry process: a layer of frosting, then fresh berries.
-
Top Layer: Place the final financier layer on top. Spread a thinner layer of frosting over the very top, leaving a rustic, slightly uncovered edge if desired.
-
Garnish: Arrange a cluster of fresh raspberries in the center of the top layer. Sprinkle with the toasted sliced almonds and finish with a delicate dusting of powdered sugar.
Tips for Success
-
Financier Texture: The key to a true financier is the brown butter and almond flour. Do not skip browning the butter; it provides the signature nutty depth. The cakes should be moist and slightly dense.
