Ingredients

For the Salted Maple Cream:

  • 1 cup (225g) unsalted butter, softened to room temperature

  • 4 cups (500g) powdered sugar, sifted

  • ½ cup (120ml) pure maple syrup (Grade A dark amber is best for flavor)

  • 1 teaspoon pure vanilla extract

  • ¼ teaspoon fine sea salt

For the Salted Maple Caramel Sauce:

  • 1 cup (200g) granulated sugar

  • ¼ cup (60ml) water

  • ½ cup (120ml) heavy cream, at room temperature

  • 2 tablespoons unsalted butter

  • ¾ teaspoon flaky sea salt (such as Maldon), plus more for topping

For the Torte Assembly:

  • 4 sleeves (approx. 160 total) saltine crackers (choose original, unsalted tops if possible)

  • 1 ½ cups pecan halves, lightly toasted and roughly chopped


Instructions

Step 1: Prepare the Salted Maple Cream

  1. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the softened butter on medium-high speed until creamy and pale, about 3 minutes.

  2. Reduce speed to low and gradually add the sifted powdered sugar, mixing until fully incorporated. Scrape down the sides of the bowl as needed.

  3. With the mixer running on low, slowly stream in the maple syrup, vanilla extract, and fine sea salt.

  4. Increase speed to medium-high and beat for an additional 2–3 minutes until the cream is light, fluffy, and smooth. Cover and set aside at room temperature while you prepare the caramel.

Step 2: Prepare the Salted Maple Caramel Sauce

  1. In a medium, heavy-bottomed saucepan, combine the granulated sugar and water over medium heat. Stir gently just until the sugar is dissolved. Stop stirring once dissolved.

  2. Continue cooking without stirring, swirling the pan occasionally, until the mixture turns a deep amber color (about 8–10 minutes). Watch it closely so it doesn’t burn.

  3. Remove the pan from the heat. Very carefully and slowly, pour in the heavy cream (it will bubble up vigorously). Whisk constantly to combine.

  4. Once the bubbling subsides, whisk in the butter and ¾ teaspoon of flaky sea salt until smooth.

  5. Transfer the caramel to a glass jar and let it cool to room temperature, where it will thicken. You will use about half of this sauce for assembly and the rest for serving.
