What goes into this Teriyaki Chicken Lo Mein?

Ingredients for 4 people:

For the chicken and vegetables:

  • 500g chicken breast, thinly sliced
  • 2cs olive oil
  • 3 garlic cloves, minced
  • 1cs fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, cut into matchsticks
  • 2 cups broccoli florets
  • 250g lo mein noodles

For the sauce:

  • 3cs low-sodium soy sauce
  • 3cs honey
  • 1cs rice vinegar
  • 1cs sesame oil

For garnish:

  • 1cs sesame seeds
  • 2 green onions, chopped

How to make this Teriyaki Chicken Lo Mein?

  1. Get everything ready First, prepare all your ingredients. This recipe moves quickly once you start cooking, so having everything ready will make it much easier!

Note: Here’s a little trick – slice your chicken while it’s slightly frozen to get those perfect thin slices.

  1. Cook the noodles Start by cooking your lo mein noodles according to the package instructions. They should be al dente – they’ll finish cooking in the sauce later.

Note: If you can’t find lo mein noodles, don’t worry! You can use spaghetti or linguine instead. The texture will be a bit different, but the dish will still be marvelous.

  1. Prepare the wonderful sauce In a small bowl, mix together:
  • 3cs soy sauce
  • 3cs honey
  • 1cs rice vinegar
  • 1cs sesame oil

Make sure to mix everything well – you don’t want honey clumps in your sauce!

  1. Cook the chicken and vegetables Heat 2cs olive oil in your wok or large skillet over medium-high heat. When it’s nice and hot, add the sliced chicken and cook until golden brown (about 5-6 minutes). Remove to a plate.

In the same pan (don’t clean it – those brown bits are full of flavor!), add your garlic and ginger. Let them release their aroma for about 30 seconds.

Add your vegetables in this order:

  • Bell peppers – cook 2 minutes
  • Broccoli – cook 2 minutes more
  • Zucchini – cook 1 final minute

Note: Keep the heat high and keep everything moving. We want the vegetables crispy-tender, not mushy!

  1. Combine everything Return the chicken to the pan, add your cooked noodles, and pour in that wonderful sauce you prepared. Toss everything together until the noodles are shiny and the sauce coats everything perfectly.
  2. Add the final touch Sprinkle with sesame seeds and green onions just before serving. The heat will awaken the sesame aroma, and the green onions add that perfect fresh finish!

Tips and tricks for this recipe

  • Noodle tip: Rinse your cooked noodles with cold water to stop them from cooking further. This prevents them from getting too soft when you add them back to the hot pan.
